Cream of Broccoli Soup

  • 2 cups chopped broccoli, 140g
  • Coconut cream powder, 120g mix with 400ml water
  • ½ cup chopped celery, 55g
  • 2 tablespoon flour, 18g
  • 1 cup water
  • ¼ cup chopped onion, 30g
  • 1 teaspoon salt, 7g
  • 1/8 teaspoon white pepper powder, 0.3 g
  • 2 tablespoon butter or cooking oil


  • Firstly, simmer the broccoli, celery and onion in water for 20 minutes or until very tender. Then, puree, a little at a time, in an electric blender at low speed. Next, heat oil/butter in a saucepan over medium heat. Pour in flour, and cook until lightly browned, stirring frequently. Add in the coconut mixture slowly into the saucepan, stirring until smooth. Stirring occasionally until hot but not boiling. Serve hot.
